Independence Day… 4th of July is more than just a day off!

How do you celebrate your Independence? Not everyone has the 4th off in my family, so I plan on spending the day shopping and prepping for our 5th of July Family Celebration… I’m going to hit some sales with my Daughter-in-law and Grandchildren. I have a few things that I have to do for my Father. Then I will be at home doing what I love… cooking! My job is to make Spanish Rice ( it’s a special request) but I’m going to make a few other favorites to satisfy my family 🙂 I took the liberty of adding links below for where you can view the best fireworks for your area, and links to the laws for your state about fireworks. Remember, this weekend is about celebration…and even though it’s about Independence..this is a nice opportunity for you to come together with your family and have fun!!!!

What I am eating this week….New Recipes!

Green Smoothie Recipe

I’m always on the hunt for new flavors and recipes..so this week I’m trying The “Green Smoothie”

Ingredients:
1 sliced banana
1/4 c. carrots
1/4 c. grapes
2 c. spinach
4 strawberries

Directions:
Measure out ingredients
Place in plastic baggie
Seal and freeze

Meatball Ingredients:
1 pack each of ground chicken and turkey
2 tablespoons Jamaican Curry powder
1 pack of Goya chicken bouillon
Makes 18 small meatballs

Sauce Ingredients
2 tablespoons of olive oil
2 teaspoons minced garlic
1 tablespoon curry powder
2 tablespoons tomato paste
1/2 cup chicken broth

After the meatballs come out of oven, add them to the sauce in the skillet and coat well.
Serve over rice, pasta or eat alone

This is my 1st time freezing shrimp after I cooled it, so I only did 4 servings of this.
(The Internet says within 2 months freezing)

Ingredients:
2lbs shrimp (peeled & deviened)
16oz Broccoli
16oz Cauliflower
3 tablespoons of minced garlic
1 tablespoon Worcester sauce

Shrimp:
I cooked on the stovetop, mixing Worcester sauce, garlic, blackened O’Bay seasoning, olive oil…sautée until done… immediately remove from heat and transfer to meal plate.

Broccoli & Cauliflower
I used the frozen bags, sautéed them in a drizzle of EVOO …once they start to cook…you can toss to heat or let them caramelize. At The end I add Italian seasoning (oregano, basil, thyme, rosemary) and 2 tablespoons of minced garlic.

Breakfast: 4 egg whites, banana
Mid AM Snack: 1/2 cup fruit
Lunch: Bagged Salad 1/2 cup fruit
PM Snack- 2oz hummus and small apple
Dinner: Frozen prep meal above

My 1st attempt at this delicious treat and I knocked it out of the park! I can’t wait to make this for my Grands!

Green Apples with skin on, cored, with 2 Oz of apple juice in blender

I basically made my own applesauce..but I’m using this as the base to my sorbet. 1 apple 2 oz of apple juice.

The darker the banana the better the nutrients

I used 1 medium sized banana. Did you know you can prefreeze these to save some steps in your smoothie making process? They say they are awesome grilled… Maybe one day I will see for myself!

If you freeze your bananas,  make them small-med sizs chunks so they break up easier in the blender when frozen.

This is my go to fruit mix… it’s always in my smoothies. I have a hard time with texture so I can’t eat a lot of these fruits separately….so I blend them!

1/2 cup containers with lids are perfect to hold the now smooth mixture….which is ready for the frezer!
